It allows you to mount drives in your filesystem (i.e., on your OS X desktop) utilizing remote (and other) protocols. For example, on a server running ssh, you can have said server's hard drive appear on your desktop rather than manipulating it via the ssh shell. Same for FTP and other protocols. The NTFS plug-in for FUSE has been of particular interest for OS X and Linux, as those two OSes have traditionally only had read access to NTFS (i.e., Windoze 2000/XP/Vista) volumes, but can gain full read/write access via FUSE.
