As an exchange admin, the following advice causes me to cringe [1]... but it works if the other person is using iCal.

Why not just forward your meeting notices in Outlook to the account you monitor with Mail.app? When the message is received it will have an .ics file as an attachment. Double clicking on the attachment will add the meeting to iCal. You will lose the list of required attendees but the meeting organizer will still show up. The rest of the attendees appear in notes.

If I want to add something to my iCal, I always send myself a meeting notice. You may need to check mail.app preferences and turn on "automatically add appointments to iCal".

1. Never do this if the other person is using Outlook - causes weird issues with meeting notices. calendaring and Blackberry.
