10.5: How to keep folders, not Stacks, in the Dock
While I'm not entirely happy with my solution, it does allow me to keep the functionality of stacks, and create a recognizable icon to know what stack I'm looking at. I like having my application folder in my dock, and having the address book icon there all the time was not what I really wanted. Since this front icon isn't likely to change often, as it does in the download folder (which I actually like) I decided to change it. So I made and empty folder, named it "00000applications" and put it in the applications folder. I then went to my Macintosh HD, selected my application folder, hit cmd+I and then highlighted the icon in the upper left corner of the get info window. I then copied it with cmd+c. I then went back to my 00000applications folder and hit cmd+I again. Again I selected the icon in the upper left corner, and pasted in the application folder icon I copied before using cmd+v. Then just make sure you are sorting the applications folder by alphabetical order. The first icon that will show in your stack will be the application folder. Stack function with a non-changing icon. The only downside of this is now you have an empty folder called 00000applications in your applications folder. I can see what it looked like in my dock using my school folder at the link.
