Another option is to just install Privoxy from the SourceForge project page. Not only will it run on startup, as an unprivileged user instead of root, it will be a Universal Binary too! Disclaimer: I'm the packager for the MacOS X version of Privoxy, so perhaps I'm biased. It does currently use StartupItems instead of launchd, but it doesn't make any difference until I can get RunOnDemand working.
