You could also just the receipients initial...like one of your Friends is called Jamie Knoxville, the other is called Jamie Meyer just type "j k" or "j m" respectively and you will have the correct name in mail.

You could also assign a nickname to your boss and friend using adressbook. It's a hidden field by default, but you can enable it by editing the default card template. If you type the nickname in Mail, it will also autocomplete to the correct email address.

No, Mail.app unfortunately doesn't care about nicknames.
