I had the same problem... despite changing the cart, the paper options wouldn't change in Photoshop.

My solution (albeit 'clunky') is to attempt a print onto one of the matte paper options at which point you'll be informed that the ink config doesn't match the chosen media... when you back to select the paper - all the glossy options are there.

once the epson driver is installed

you need to add another copy of the printer drive by....

open printer utiltiy in applications/utility
click add button
select 'stylus photo r2400'
and print using 'epson stylus photo r2400 v3016.103' or similar
press add
delete the old previous printer

once this is complete, you will be able to select the printer in the list, click the "show info' button and click the 'installable options' and there you will be able to select either the matt or photo cartridge.
