Yes dino p, you're right, I did check these setting and yes you are right about the "Wake on ethernet admin" settings only applying during sleep.
But as far as I know, the stealth mode DOES respond to uninvited network packets, but only internally, say, to Console.app.
Stealth mode does not reply externally from you computer to the outside world.
If stealth mode is off, packets get rejected and sent back to the originator saying, for example, port XXXX is not open.
