nano is handy, when you're always in Terminal... shell script writing, checking email with mutt, and general system stuff.

TextEdit is great for Note Take in Finder/MacOS land.

SubEthaEdit is great for collaborative script writing, and Smultron is cute, with its default line numbers showing, multiple doc view, etc
