You can also press command-option-8, wich unzooms without animation. Works right out of the box, without setting anything in Preferences!

Sorry, my mistake! I mis-interpreted a forum hint from somewhere, I didn't actually check it myself. Cmd-option-8 does not zoom out, it only enables zooming in- and out with the keyboard.

if this was before 10.4.7, that used to work (and i've grown to depend on it).. for SOME reason, apple changed that behavior as of 10.4.8.. scroll zoom was a nice addition but the fact that they changed the behavior of turning zoom off (but not unzooming) didn't make any sense! i'm glad to have come across this hint as it restores the behavior.
