Can you point us to some tutorial that describes how to do this for the non-'Nix literate? This sounds like it would be useful for our laptops.

iTunes7 has multiple library support. Hold down Option when you launch it, as reported in a Hint here last week. Not the most elegant implementation, but it does work.

Thx for the hint with the option-key. In that case, creating a mountpoint is overkill. Just copy your iTunes-Library to your NAS-storage and hold down the option-key while iTunes is starting and choose the iTunes-Library on the NAS-storage.
