Why don't you just use "Group compilations when browsing" in the General preferences then select all the tracks from a album, Get Info, and make sure Compilation is checked Yes.

That way you only get one album cover for all those tracks as it should be in the two album cover views in iTunes 7.

That solution would certainly work, although I chose not to do that because I feel it "penalizes" the music I care about (I don't want to mislabel an album as a compilation unless it really is a compilation) while benefitting the stray music (by giving it the dignity of a track number).
