If the goal is to get an excerpt, without harming the original or re-compressing the audio, how about this:

With podcast selected in your iTunes list, type CMD-R. This Reveals the file in Finder.

CMD-C to Copy.

CMD-V to Paste.

CMD-O to open [if iTunes is default opener for that file; otherwise, drag to iTunes?]

Change options as described above. Note you only have to change those options once, to the copy you pasted. Original remains unscathed.

Seems a tiny bit more efficient this way, but the main thing is you don't add artifacts to the sound by re-compressing it. Main attraction to me is that you don't need a mouse much.
