There's another way to do this: when composing the email, select 'Add Reply-to Header' from the 'Message' menu. You can type anything you want in the subsequent field that appears (as the original poster wanted), and this will be the address from which the message appears to have originated.

The only caveat with this method is that the source of the resultant message shows your 'real' email address as well as this one, but replying to one of these messages will send the reply to the address you entered in this extra field.
