Using the column 'Number' you are not viewing the count of the messages, you are viewing the order in which the mail was received.

To see why exactly this may get confusing, go to the 'sent' mailbox and sort by the number field. Then sort by the 'date sent' column so most recently sent is listed at the top.

Exactly. It doesn't make sense to have a column that shows the number of items in the list. The Number column is just that, the message number. So if you have, say, 20 message in a mailbox/folder, but you've received and deleted thousands of messages, the newest messages will show an extremely high number, yet you only have 10 messages in the mailbox/folder. There's no way you can use that as the current message count. Therefore, this is not a hint and should be removed.
