I had a similar problem with iTunes only showing 175Mb of Purchased Music but Backup finding over 8Gb!

Using the hint above as a starting point I created a copy of the and then edited the DefinitionPlist.strings file to remove references to video files and reference to file type 1295270432 (this seems to gather all bookmarkable files - which had included all my audiobooks and all my podcasts).

So my new DefinitionPlist.strings file looks like this

and Backup is now only selecting 237Mb to backup to my iDisk - much more manageable, though I may still play around to get closer to the figure of just 175Mb.
