Been trying to get the Xerox Docuprint 1210 to work in osx 10.3... Here's how I did it using the HPIJS driver:

1. Install the two free driver files from: http://www.linuxprinting.org/macosx/hpijs/

(hpijs-foomatic-2.0.2.ppc.dmg & espgs-7.07.1.ppc.dmg)

2. Set Up Instructions

To set up the HPIJS driver for your USB printer, open Print Center, hold down the option key, and click the Add Printer button in the Print Center toolbar. Within the setup sheet, choose Advanced from the top popup; then in the Device: popup select your printer by name (it should be the last item in the menu list). Finally, select the correct PPD from the model browser and click Add.

As the Xerox 1210 isn't supported i picked the PPD for the Samsung ML-1250 as I heard they were similar.

Guess what it works! (so far)

Can't tell you how excited I was to come across this. I've been struggling with the same thing. Unfortunately, even this hasn't worked. I'm not sure why. Same printer, same OS.

Could it be the cable? At some point I lost the original 1210 printer cable and when I was using OS 9 I replaced it with one from Belkin (which might have been for OS 9 only). I'd invest in a new one if I could be sure it would work. Any thoughts? Or is the cable a red herring?

My other is an old PowerPrint cable I have hooked up to an HP Laserjet 5L, which also doesn't seem to work for this (the cable, that is. The printer works fine, with similar finagling).
