Using a script I wrote for vim, you can edit the binary plist files with the described conversions from/to binary happening automatically in the background, as described in a hint here on this site.

This is nice if you are the curious type of person and want to browse aroung in the plist a bit at the same time to see if there are any other interesting keys you tewak. If you just want to change a single key, the above mentioned method with defaults write is undoubtedly the fastest.
