Unfortunately, "paste and match style" doesn't actually do that in iChat--it pastes in iChats default style (Helvetica, I think) no matter what font/size/color setting you're using as your default. Still, it's better than getting an html link when you really just want to paste a straight URL.

True if it's the first text you paste in the space, but I discovered that once you've typed anything, Paste and Match Style then matches your default font. I type a letter first, and delete it before sending the IM. Clunky but still faster than any other way.

Also, the AIM server automatically parses any valid URL or e-mail address and converts it into an underlined link anyway, so you can't send a full URL in plain text on that system. I enjoy making my own links with Edit > Add Hyperlink… ⌘K.
