Actually, you can also install 10.3 and earlier with multi-disc sets using the OSInstall.mpkg workaround as well. Just create compressed disk images through Disk Utility, mount them all, and then run the OSInstall package. I used this to re-install an iBook via Target disk mode, since it wouldn't boot from the stock 10.3 CD due to system version.

This also seems to work with at least some other multi-disk installers such as the Adobe Creative Suite; besides saving on disk shuffle/inventory hassle, the install is also notably faster than off the original media.
