Use Quicktime Player to export movies to iTunes video

If you have PSPWare or iPSP, the videos it creates are compatible with the iPod. I have a bunch of stuff I have converted and most of it looks better than the PSP. Some Widescreen stuff doesn't look as good, tho.

No-cost approach

Neither PSPware nor iPSP is free. The method that I use above to get videos to the iPod is available to any Mac running OS X, and costs nothing.

Grab the most recent versions of iTunes and Quicktime (both free) if you need. The Automator-based Finder plugin requires 10.4, but the Applescript should run under older versions of the OS.
