10.4: Use Automator to add QuickTime annotations

Easy just add your annotations and export the movie as .mp4. If the movie is already encoded with mp4 audio and video codecs go into options in the export settings and choose Pass Through in the Audio/Video Format. This saves time encoding the movie again.

This doesn't work. That's what I was doing. QuickTime will only keep the Copyright annotation if exporting to .mp4, independent of pass-through or reencoding. But as the other comment said, iTunes can add them.
