Just press Control-Eject on desktops and the Power button on laptops. then you can click the Sleep button or press S. On desktops you can also push the Power button to instantly put it to sleep. I'm very surprised no one knew this!

The whole point is not to turn your computer off, just have your monitor turn off. Sleep is not an option.

Anyways I just manually change the display sleep time to 1 minute in Energy Saver, thus the screen is actually off and I can sleep peacefully. There is a way to script this (via applescript or the energy control terminal commands), which I haven't bothered to figure out yet.
