If it's a mirror then you should be able to remove or reformat the bad member while booted from the remaining drive. Then you can add a new member to the set and re-mirror in the background. In Tiger you can specify another drive as a warm spare with an auto-rebuild option.

If it's a stripe you're generally screwed.

Also remember, RAID != Backup. RAID is uptime assurance.
