now, could somebody please write a few words about polling? i believe it has something to do with journaled file system but in which scenarios would be worth to change the interval?

polling in the given context refers to the amount of time the SpindownHD program waits until it tries to detect new devices.
this can easily be seen when unchecking "Polling": the "last Update" time won't automatically increase anymore.
so this has nothing to do with your drive configuration or even journaling.
