As EddEdmondson pointed out, your bookmarked feeds will all appear in the "All RSS Feeds" smart folder in the Bookmarks pane of Safari. All bookmarks in this folder will appear in the list of feeds for the RSS Viewer screensaver. Instead of editing a .plist, all you have to do is bookmark a feed, then select it from the list that pops up when you click the "Options" button.

It appears that Apple also included a large number of feeds in Safari. When I checked the "All RSS Feeds" folder, there were many already there from sites that I had never visited before.
