Even Better: CMD-N, CMD-P

I tended to just leave the mouse over the 'Next' button, change the text, and then click the mouse.

It's cool how the same text box is selected, and I really like the text-box editing keys under OSX. I hate that under WinXP I can't press 'down' to get to the end of the URL in IE (the only browser on the work machines...) and so on.

I will use the Cmd-N/P controls though, I prefer using keyboard over mouse...

For those times when you're stuck with Windows, and you're editing in a text field, whether you're using IE or not: the Home and End keys will do what the Up and Down arrow keys do in an Apple text field. Home takes you to the beginning of a line; End takes you to the end of the line.
