A good way to get around this is to go to Insert > Date and Time... (maybe set up a keyboard shortcut to access this menu item), and then choose the date format you'd like and make sure "update automatically" is checked. This will use the date on which the document is printed every time you print it. The downside is that you won't be able to tell *when* you printed the document (since opening the file on any day will show that day's date), but that's what File Info is for, right?
