I posted this on that thread. You don't need eSound at all. OS X's CoreAudio is already multichannel. Many sound cards, such as the M-Audio Audiophile 2496 (and any of their cards that uses the Delta drivers... which is just about all of them!) has a multichannel option in the list of audio devices, i.e., "Multichannel Delta AP." Using the multichannel option stops sounds from cutting each other off.
