David Pogue wrote about this, and many other shortcuts in his new book "Mac OS X: The Missing Manual." No, I don't have any affiliation with the author or publisher (O'Reilly) but I would like to say that it is a very good book - well written and well edited. He tends to be a little over-enthusiastic about some things but the content is solid. He also mentions why it's inconsistent between apps, the main reason being that many OS X apps are actually Carbon-based, even Microsoft Office X (which doesn't even run under OS 9) - the OS X Finder is not even a Cocoa app. Strange but true.
