How did you config the AP Express. I remember reading an Apple KB article stating that this was not possible. (or at least not supported)

I forgot to say that my iMac wouldn't load the AE Setup Assistant software - because it didn't have an Airport installed. Luckily I have an airport enabled tibook, and was able to use that to configure one AE as a base station using WDS and the second one to extend that network.
