...in other words, how do you get this to create images that are no more than, say, 120 pixels in their longest dimension, regardless of whether they're landscape or portrait oriented??

Is it possible?

easiest way is to use "sips" from the command line:
% sips -Z 120 imagefile --out newimagefile
or
% sips -Z 120 imagefiles --out newimagefiledirectory
