I'm not a big fan of opening files while they're being modified
They're not being modified, only copied.

The destination file in a copy operation is most certainly being modified. It starts out empty and ends up with the full contents of the original.

Opening the destination file before the copy is complete shouldn't be a problem provided that 1) the opening application only reads from the file and 2) the opening application doesn't read through the file faster than the copy operation is writing it.
