A simpler way...
There is a setting in the iTunes preferences dialog,
under "advanced", that lets you directly specify what folder should be used for the mp3s.

This does work but the catch is that while music does relocate to the Music folder, the playlist(s) are still saved in the default location. I suppose the rationale might be that music could be placed in a shared location for other users to access but the playlist could remain private. I would prefer to move all iTunes related files to the Music folder. Any solutions?
A simpler way...
The easiest way is to move all of your files to the music folder and then replace the iTunes folder with an alias to Music that you have renamed iTunes. It means that you still have something called iTunes in Documents but that is really a very minor matter of asthetics. I used this trick to move my music to a seperate partition altogether and it has never been a problem.
