If you are in a heterogenous environment (hopefully with at least one linux box to act as the server) and have a reliable tape drive, you could look into setting up amanda (www.amanda.org). Mac OS X works pretty reliably as an amanda client, and you get incremental backups out of it. It's not a completely trivial setup, but the instructions at http://web.brandeis.edu/pages/view/Bio/AmandaMacOSXCompileNotes
