Lifting some features from KMail would be nice

That would be good. For comparison, I'll show how I used to use KMail to handle this:

1. HTML display turned off entirely. Any HTML emails, when opened, display only the source. A red box at the top says that HTML rendering is disabled, and why this is a good idea. In that box is a link you can click on to cause the message to be rendered, if it's from someone you trust and/or the code you can see doesn't appear to be doing anything sneaky.

2. Pretty much all settings can be overridden on a per-folder basis. So my "Dilbert" folder can render the daily strips sent to it, without having to click on the link each time.

Apple's Mail app is ok, but I miss this kind of configurability.
