I quite happily use the old Disk Copy from Jaguar to create my disk images. The process is made even faster by using FruitMenu (surely the best haxie out there) to add an "Open With Disk Copy" to the Finder contextual menus. Thus I can just right-click on a folder and choose to open it with Disk Copy, at which point I get a dialogue box asking me where I want to save my disk image. You can use Pacifist to extract Disk Copy from your Jaguar installation disks.
