run an IMAP server on the Mac

What if you run an IMAP server on your Mac? Then you can connect to it from Outlook on the Windows box to transfer the contents of the .pst file to that server. The benefit would be that you wouldn't need to leave your Windows box running anymore in order to get at that archived email. Then I think you can just connect to localhost from Entourage X or Mail to read from the new archive. (Another benefit is that an IMAP-compatible Unix mailreader like mutt would be able to access the same mail archive.)

I plan on testing this soon with uw-imapd-ssl from the fink distribution. (Of course, I'll make a backup of the .pst file first :)

I have tried this, it munges the original email address about half the time.
