I work on a Mac but my website is hosted on a unix system. Can I use
authorized_keys with the unix server?

As long as you have shell access, you should be able to. It's how I administer our company's offsite linux server. Just create the hidden .ssh folder in your home directory and follow the same steps.

(TIP: If you ssh into multiple machines you might consider using a differently colored terminal window for each. The visual indicator will help you remember where you are. ;-)
