I had same problem with my iMac 333 with new 40GB WD HD. There were two Master jumper settings, I tried second and drive booted X. Also had to create 8GB partition for boot.

similar problem with beige desktop G3

I had a similar problem with a beige desktop G3. OS 9 installed just fine, but when I tried to install OS X, no dice. Opened her up thinking I would need to replace drive, noticed that there was no jumper. Now OS X installs, but only gets about half way before the machine powers down to sleep mode and hangs itself. This is getting very tiresome. I got this machine for my kid sister who is graduating and needs a computer of her own for college! Now I'm thinking she's gonna be stuck in OS 9.... very unfortunate! - I do not have another machine similar enough to use to install on (my main machine is a 12" PowerBook, before that a Lombard G3 400 PowerBook)

you can turn of the energy saver feature, set to "never go to sleep"?

slide the control to never.

Beige G3 Cable Select Jumper Setting

I've had several beige G3s that had to be set to CS (Cable Select) in order to work properly with large hard drives.
