You can select "All Files" in the lower left corner of the open dialog. The hint works not for me in Photoshop. I instead made a new alias from "Adobe\ Photoshop\ 7/Adobe\ Photoshop\ 7.0/Contents/MacOS/Adobe\ Photoshop\ 7.0" outside the app package. For Illustrator I made an alias from "Adobe\ Illustrator\ 10.0.3/Adobe\ Illustrator\ 10/Contents/MacOSClassic/Adobe\ Illustrator\ 10". Thank you dr_turgeon for that useful tipp.

...but req. an installation of Ph. 6 and Ill. 9 though...
Select Photoshop 6 and Illustrator 9 as your editing applications in Acrobat. Start Photoshop 7 and Illustrator 10. Select an image to edit in Acrobat. The image will open in Photoshop 7/Illustrator 10 and you will not have any problems with the auto update in Acrobat.
