Speaking from personal experience, I always found that the most complex UNIX installation instructions usually started with "To install Linux, you ...." ;-)

OS X is the first UNIX-based OS I've found easy enough to work with to actually learn a bit about the operating system. Mucking about with a sendmail replacement, though, is an advanced topic. If you don't know why you might want your own mailserver (why would you want one?), you probably won't need to install Postfix...
