I would also just move them to a disk image or zip the apps and trash them afterwards. I used the zip method quite often when a user had newer app versions installed he should not be using (yet).

Are you sure that the App Store can still "see" them as installed on your computer inside a disk image or zip file?
If it can't, then you'll still get pestered with reminders to update again.

Good point. I used this technique pre-App Store and didn’t think about that. I could imagine that the updater might see the apps while the disk image is mounted, but definitely not the zipped ones.
