You can control it while typing

Also note that if you press cmd-Z (undo) it will undo the bold face and return your text to *foo*

Other features include:
_foo_ will give you italics

typeing * foo [folowed by a return will automatically start a bullet list]
1. foo [or] 1) foo [folowed by a return will automatically start a numbered list]

And of course, typping cmd+z will undo the list generated (so cmd-z cmd-z will undo the last text you entered, not just one cmd-z)

Similarly if you type text that word autocorrects cmd-z will undo the correction

Once I got used to it it made my documents look much better since I was more willing to set up lists etc.
