Wish you could also do this with Preview.app - unfortunately Preview.app from SL won't run on Lion for some reason.

I applaud the versioning system introduced with these new apps - but for me personally it adds several steps to what was once some simple procedures from modifying files.

I'd guess that the system frameworks that Preview depends upon are too different between Snow Leopard and Lion.

It's a given that TextEdit uses some system frameworks too, but some more simple ones, like rich text and HTML processing, spell checking, etc., that must not be that different between Snow Leopard and Lion.

Or it could be as simple as the .plist prefs file for Preview in Lion could contain some key-value pairs that are new, and therefore freaking out the old version of Preview when you launch it..I suppose the real answer is in Console.app if you really want to find out why it doesn't work!
