Well... there are two GUI programs, Pallet (a package manager) and MacPorts Notifier (a menu bar item), which should make things easier (and they both install into /Applications/MacPorts).

Well, things have improved. Macports silently introduced a precompiled binary repository some months ago (http://packages.macports.org). This includes binaries of gimp2-devel (2.7.3) and the stable gimp2 (2.6.11).
While The Gimp still has a lot of dependencies, install time is now vastly reduced.
