If my machine freezes up, I boot into single user mode and run "fsck -fy" on it to check for and repair any disk damage.

Should I also run fsck_hfs? Or are fsck and fsck_hfs practically the same thing?

The 'fsck' command is just a proxy to a format specific command such as 'fsck_hfs'. There's no need to run both.
