10.7: Enabling Java

Another way to install Java on Lion is to go to the command-line (Terminal) and type "java". If java isn't installed it will prompt you to install it (via Software Update).

The installed version is Apple's Java 1.6 VM. Oracle will provide Java for Mac starting with Java 1.7 (which was just recently released for Windows and Linux). Java 1.7 isn't yet available for the Mac but supposedly will be "soon". Also supposedly, future versions of Java will be release for all three platforms at the same time by Oracle.
