If your device doesn't have a UUID, you can use the label instead, which is just the name of the folder that represents it in volumes.
So if your NTFS drive appears as /Volumes/MyDisk, open terminal, type:
sudo pico /etc/fstab
And add a line:
LABEL=MyDisk none ntfs rw
