What's the process for doing it with just Preview?

Open PDF in Preview. Paste in signature. Resize and position.

In Preview (5.0.3 in OSX 10.6.6) I can add text to a pdf (ctrl-cmd-T) , but I cannot paste a copied image to a pdf. I can paste images into a different image format, but not in a pdf. How do you do that?

Hmmm... right you are. You have to save it as an image first which of course loses the text. I guess in the cases I've needed to do it, it's to sign something and fax it back, so losing the text wasn't an issue.
