Two important ones missing...

1. Tap and swipe upwards to quickly get special characters on iPad.

For example, if you want to type "ä", press "a" and then quickly swipe upwards, and you'll get a nice "ä".

Unfortunately, this only works on the iPad and not iPhone/iPodTouch. And it's also depending on the selected keyboard, e.g. with a German keyboard you'll get "ä", with a French one, you'll probably get an "á".

2. Use different keyboards to change the language (and thus the auto-correction's dictionary)

It can really drive you mad to type a foreign text with a keyboard not set to that language (eg. typing an english text with a german keyboard), as all words are being auto-corrected (wahh!). But if you enable the english keyboard as well, you can kind of switch the input language along with the keyboard.
